Why Is My Coffee Bitter? How to Fix It
Bitter coffee is almost always caused by over-extraction — too many compounds dissolved from the grounds. The good news: it's easy to fix once you understand the cause.
Common Causes of Bitter Coffee
- Grind too fine: Water extracts too quickly. Grind coarser.
- Brew time too long: Coffee over-steeps. Reduce contact time.
- Water too hot: Above 96°C extracts harsh compounds. Lower temperature.
- Stale coffee: Beans older than 6 weeks lose aromatics, leaving only bitterness.
- Dirty equipment: Old coffee oils turn rancid. Clean your brewer regularly.
