How to Dial In Espresso
Start with a standard 1:2 ratio (e.g., 18g in, 36g out). Pull a shot and taste it. Use the compass to identify the problem and adjust one variable at a time: grind finer for sour shots, coarser for bitter shots.
Common Espresso Problems
- Sour espresso: Under-extracted. Grind finer, increase temperature, or extend brew time.
- Bitter espresso: Over-extracted. Grind coarser, lower temperature, or shorten brew time.
- Weak espresso: Low concentration. Increase dose or decrease yield.
- Strong espresso: High concentration. Decrease dose or increase yield.
